Good ol' avocados! I eat at least one every day. They're so incredibly healthy, high in vitamins C, E, K and B6. They're also high in riboflavin (B2), niacin (B3), folate, magnesium and potassium. Plus they're super high in omega-3 fatty acids (the good fats) and provide the body with beta-carotene.
Lathered thick on toasted multigrain sourdough bread with some delicious toppings and a perfect snack or light meal is made.
Tip: breastfeeding mothers, an avocado a day will help keep your milk fatty and healthy for your growing babe!
1 avocado, pitted and mashed
1 Tbsp freshly squeezed lemon juice
fresh ground black pepper
1 tsp chili flakes
sprinkle of raw, unsalted sunflower seeds
1 piece of multigrain sourdough bread
Begin by toasting the bread. Peel and pit the avocado and scoop it out into a bowl. Mash it with a fork until it's creamy. Spread it on the toasted bread and top it with freshly squeezed lemon juice, black pepper and chilli flakes.
